Salmon with Herb Sauce

“What is your favorite thing to cook?”  This is the question Kevin gets asked the most.  His reply is always the same, “Healthy food.” I guess that is why he is always looking for a new salmon recipe to try since salmon is a healthy meat.  Kevin’s version of “Salmon with Herb Sauce” from The Complete Step by Step CookBook is brought to you by Kevin’s Crew/Backers.

1/2 onion, chopped

3 carrots, chopped

1 lemon, sliced

2 bay leaves, a sprig of rosemary and parsley

1/2 c. low sodium chicken stock

2 salmon

1 bunch of watercress

3 tbsp. parley

3 tbsp. fresh dill

1 c. low fat ricotta cheese

Preheat oven to 425 degrees.  Place a large piece of foil on a large baking sheet.  Make a bed of all the vegetables and half the lemon slices on the foil.  Place salmon steaks on vegetables and add the garnishes (bay leaves, rosemary, and parsley) and remaining lemon slices.  Fold up foil.  Add chicken broth.  Seal edges of foil tightly.  Bake 45 minutes.  Remove baking sheet from oven.  Strain cooking liquid, then boil it until reduced to about 1/3 c.  Add watercress and herbs and boil until softened.  Pour herb mixture and liquid into a blender or food processor.  Add cheese and puree.  Season with salt and pepper.  Pour into a serving bowl and refrigerate.  When ready to eat, serve sauce over salmon.

Serve with a salad.
