The Kevinator Soup

This soup is the quintessential entrée that meets the needs of those who are following a fiber rich diet. Kevin created this soup as a result of a recent hospital stay where it was brought to his attention that he needed to get more fiber in his diet. After googling and finding lists of fiber rich foods, his mind went straight to work on creating a dish that would incorporate a wide variety of what was on the list. I must say, he struck “oil” again, for this is a superb soup! Kevin’s Kreations are beyond amazing! Thank you, Aunt Shirlene, for helping him research this information. Thank you, Kickstarter Backers, for backing his project! (Serve with baked sweet potato and a bowl of fresh strawberries and blueberries for a complete fiber-rich meal!)
6-8 boneless, skinless chicken thighs
1 can garbanzo beans, rinsed
1 can pinto beans or white kidney beans, rinsed
1 large Big Boy tomato, diced
1 onion, diced or use 4 oz precut onions
4 oz. frozen corn
16 oz. unsalted chicken broth or stock
¼ tsp. smoked paprika
½ tsp. cumin
Boil chicken until tender. Remove from pan along with all of liquid stock, except for ½ cup. Add onion and cook until tender. Add corn and beans. Stir. Then stir in paprika and cumin. Add chicken and natural broth. Stir in additional broth/stock. Add tomato. Simmer for 30 minutes. Serve in cups or bowls. Add cilantro and chives on top.
