Quinoa Stuffed Tomatoes

Kevin cooked another amazing recipe, Quinoa Stuffed Tomatoes!  This delicious side dish will complement any meat such as chicken, fish, or steak.  Be sure and use homegrown tomatoes if you can because nothing tastes better than a homegrown tomato.  We bought ours from a local young man, Garner Rodriquez.  Garner’s mom is one of our Kickstarter backers and we are thrilled that Garner has a garden and produce stand where we can purchase and cook with some of the freshest vegetables and fruit around.  Check out Garner’s produce stand located in Greer’s on Main Street in downtown Nacogdoches.  Thank you, Garner, for the awesome tomatoes, and thank you Kickstarter backers for supporting this recipe.  Kevin’s version of this recipe comes from Better Homes and Garden Special Interest Skinny One-Dish 2015. 


6 homegrown tomatoes

1 c. chicken broth

1/2 c. quinoa, rinsed and drained

1 1/2 c. zucchini, chopped or thinly sliced

1 tsp. olive oil

2 Tbsp oilive oil

2 tbsp. lemon juice

zest of one lemon

1/4 tsp. oregano

1/4 tsp. thyme

1/4 tsp. basil

1/4 tsp. salt

1/4 tsp pepper

1 tsp. honey

1/2 c. feta cheese

2 tbsp pine nuts


In a small pan, combine broth and quinoa.  Bring to boil; reduce heat.  Summer, covered, about 15 minutes or until liquid is absorbed.  Meanwhile, in a medium skillet, cook and stir zucchini in the 1 tsp oil over medium heat until tender.  Remove and set aside.  In a bowl, combine the 2 tbsp oil, juice, zest, herbs, salt, pepper, and honey.  Whisk well. Add lemon mixture to quinoa; toss to coat.  Stir in zucchini, cheese, and pine nuts.  Cut a thin slice from the top of each tomato.  Scoop out tomatoes, leaving 1/2 inch shell.  Place tomatoes in baking dish.  Spoon quinoa mixture into tomatoes.  Bake in 350 degree oven for 20 minutes.
