Scrumptious Summer Plate

‘Tis the season for CHERRIES!  My, how wonderful they taste, especially in this healthy and nutritious meal brought to you by Kevin and his backers. You can serve this in a variety of ways: plate each ingredient separately, toss all the ingredients together before serving; or layer it in a mason jar to carry for lunch. This is Kevin’s version of “Quinoa Bowl with Chicken and Cherries” from Dr. Oz, the Good Life, July/August 2015. 

Ingredients:

1 cup quinoa

1 whole rotisserie chicken, shredded

1 1/4 c. fresh, sweet cherries, pitted

2 c. kale or other salad greens

2/3 c. crumbled goat cheese

1/2 c. walnuts or sliced almonds

2 Tbsp lemon juice

6 Tbsp extra virgin olive oil

Directions:

Cook quinoa according to package instructions.  Cool.  Whisk lemon juice with olive oil.  Toss with quinoa.  Divide each ingredient into fourths and serve separately on a plate, or toss all ingredients and serve in a bowl.
