Pleasing Pumpkin Bars

Attention Family and Friends of Pumpkin Lovers:  If you are looking for the perfect gift to make and give to your pumpkin lover friends, this recipe is for you.  Quick and Tasty Christmas Gifts hit the mark when they included this recipe in their book.  This recipe makes three 8×8 square pans of pumpkin spice bars.  Keep one for yourself and give two away.  There are two special people in Kevin’s life who love pumpkin and they were the lucky recipients of these bars.  Just ask Pastor Joe Dagostino and Uncle Steve Koonts how tasty these pumpkin bars truly are!  Thank you Kickstarter Backers for backing this recipe!

Ingredients:

1 package spice cake mix

1 egg

2 Tbsp butter, melted

1 (8 oz) package of cream cheese, softened

1 can (14 oz) sweetened condensed milk

1 can (16 oz) pumpkin

2 eggs

1/2 tsp. salt

1 c. chopped pecans

Preheat oven to 350 degrees.  In a large bowl, combine cake mix, 1 egg, and melted butter; stir until mixture is well blended (mixture will be dry).  Press into bottoms of three 8x8x1 foil pans. In another large bowl, beat cream cheese until fluffy.  Add sweetened condensed milk, pumpkin, 2 eggs, and salt; beat until mixture is smooth.  Pour over crust.  Sprinkle pecans over filling.  Bake 30 to 35 minutes or until filling is set.  Cool in pan on a wire rack 20 minutes; chill.  Cut into small bars.  IMG_4995
