Ultimate Taco Salad

Kevin could hardly wait to make this salad!  He and his friend Matthew discovered this excellent recipe on Taste of Home website just recently.  This was so delicious that everyone in the family had seconds.  We would have possibly had thirds had we not devoured the entire contents of the bowl!  The next time we make this recipe, we will be doubling it!  In fact, Kevin has already decided that this is what he will be making and taking to our next church potluck.  This is Kevin’s version of “Potluck Taco Salad” and is brought to you by his backers.  (We think this might even classify as a Gluten-Free meal!  Just be sure and check the Salad dressing to see if it qualifies.)

1 lb ground beef
1 envelope of gluten free taco seasoning, divided
½ package of salad
1 can pinto beans
1 tomato, chopped
1 c. medium cheddar cheese, shredded
2 c. crushed tortilla chips
1 (8 oz) bottle Thousand Island salad dressing
2 Tbsp. taco sauce
Fry meat until well done, draining off any fat. Stir in 3 Tbsp. taco seasoning. In a medium bowl, layer beef mixture, lettuce, beans, tomatoes, cheese, and crushed chips. In a small bowl, mix salad dressing, taco sauce and remaining taco seasoning. Serve with salad.
