Bolognese Style Spaghetti

This is not ya momma’s spaghetti!  It’s better!  It’s not spaghetti with the traditional tomato-based sauce; instead, according to Food Lover’s Guide to the World, it is the way spaghetti is served in Bologna.  Welcome to Bologna, Italy!  You will be glad you came! 4 oz. bacon or pancetta

1 onion, finely chopped

2 carrots, shredded

1 celery stick, finely chopped

2 garlic cloves, minced

3 mushrooms, sliced

1 lb lean hamburger meat

1 can petite diced tomatoes

1 small tomato, pureed

12 oz. beef stock

2 oz Welch’s grape juice, no sugar added


Cook bacon, onions, carrots, and celery in a nonstick pan for 20 minutes until golden.  Add the garlic and mushrooms and cook for two minutes more.  Heat a large iron skillet.  Cook hamburger meat until brown.  Add the vegetable mix to the cooked meat.  Add the puree and canned tomatoes.  Add the beef stock and grape juice.  Simmer slowly for one hour.  Serve over spaghetti.
