Nicoise Salad

This salad rocks!  We expected it to be a good salad; we did not expect it to wow us with every bite! It was loved by all!  This is Kevin’s version from Mediterranean Cooking and is brought to you by his Kickstarter Backers.


1 bag of shredded green lettuce

4 oz. fresh green beans, cooked

4 oz. fresh baby new potatoes, cooked

2 boiled eggs

1 can tuna

4 cherry tomatoes

1 oz black olives

(4 oz. freshly grated of extra-sharp cheddar cheese, optional)


1 1/2 Tbsp olive oil

1 Tbsp white wine vinegar

2 Tbsp lime juice

grated rind of one lime

1/2 tsp. Dijon mustard

sea salt and pepper to taste


After cooking green beans, new potatoes, and eggs, let col to room temperature. Place lettuce in a bowl.  Top with potatoes, green beans, eggs, tuna, tomatoes, and black olives.  Meanwhile whisk together ingredients of dressing.  Pour over top of salad. Serve.
