Tropical Fruit Parfaits

This delicious and healthy parfait can be eaten with breakfast or lunch.  We give it two thumbs up!  Kevin’s version of this parfait from Better Homes and Gardens Good & Fresh magazine is brought to you by Kevin’s Kickstarter Backers.


4 c. regular rolled oats

1/3 c. Baker’s sweetened shredded coconut + 2 tbsp

1/3 c. dry roasted unsalted sunflower kernels

1/4 c. honey

2 tbsp vegetable oil

2 tbsp packed brown sugar

1 mango, cut into bite-sized pieces

4 kiwi fruits, cut into bite-sized pieces

1 banana, sliced into bite-sized pieces

1/2 pineapple, sliced into bite-sized pieces

2 (6 oz) key lime pie flavored Yoplait yogurt

Directions:  First, make granola.  In medium bowl combine oats, 1/3 coconut, sunflower kernels.  In a small bowl combine honey, oil, and  rown sugar.  Drizzle honey mixture over oat mixture.  Stir until oats are coated.  Spread evenly on lightly coated baking sheet.  Bake for 12 minutes, stirring twice.  Line a large baking sheet with foil or parchment paper.  Spread granola onto sheet; cool.

To make parfaits, place one tablespoon of granola mixture on bottom.  Add several pieces of each kind of fruit.  Dollop two tablespoons of lime yogurt, next.  Lastly, sprinkle with the remaining coconut.
