Island Coconut Rice

Serve this with Dr. Choueiri Hatch Chicken, the perfect complement to this rice.  Kevin’s version of this recipe comes from Worth Tasting: A Culinary Tour Through the Architecture of the Palm Beaches. 

Ingredients:

1 (14 oz) can coconut milk

1 c. jasmine rice

1/4 c. water

1/2 tsp. salt

1/2 tsp. honey

Directions:

Combine the coconut milk, rice, water, salt, and honey in a large mix saucepan and mix well.  Bring to a boil over medium heat, stirring constantly.  Reduce the heat to low.  Simmer, covered, for 20 minutes.  Fluff the rice with a fork and spoon into a serving bowl.
