Coconut Pecan Chocolate Chip Gluten-Free Cookies

As we were out shopping today, we came across coconut flour.  Looking at the recipes on the back of the bag, we immediately thought we needed to try one of them.  We are certainly glad we did!  They are remarkable!  Kevin’s version of “Wheat Free Chocolate Chip Cookies” from Let’s Do…Organic is brought to you by his Kickstarter Backers.


3/4 c. + 2 tbsp Brown rice flour

1/4 c. Let’s Do…Organic Coconut flour

1/2 tsp. baking soda

1 stick butter, softened

1/2 c. sugar

1/2 c. light brown sugar

1 egg

1 1/2 tsp. gluten-free vanilla

1 c. gluten-free chocolate chips

3/4 c. chopped pecans (optional) (We tried them with and without the pecans.  Both are great, but we preferred the ones with pecans!)


Preheat oven to 350 degrees F.  Blend together the butter and sugars until fluffy and well mixed.  Beat in egg and vanilla.  Sift the flours and baking soda.  Add this to the butter/egg mixture until smooth and well blended.  Stir in chocolate chips and pecans.  Drop by the spoonful onto a greased baking sheet.  Bake 8 minutes or until the sides are lightly browned.  Remove from oven and let sit for 2 minutes.  Remove and cool on wire racks.
