Cauli Mac

Kevin’s new goal is to cook and blog at least one recipe from each of his cookbooks and cooking magazines.  Kevin’s dad named this recipe since the original title, “Incredible Cauliflower” just didn’t seem to quite fit.  Yes, it is incredible; however, it is a cross between cauliflower and mac-n-cheese.  Very tasty and very healthy!  This recipe from A Taste of Heaven, a Collection of Recipes by Faith Fellowship Church, Silverdale, WA, is brought to you by his Kickstarter Backers.


1 small head of cauliflower, cut in 1-2 inch pieces and boiled or steamed
2 c. med sized pasta shells
1 small chopped green onion
1 c. low-fat cottage cheese
2 c. grated cheddar cheese

Cook pasta shells in salted water until tender. Process or blend the cottage cheese and onion until smooth. Add cooked cauliflower and 1 ½ cups cheddar. Stir until mixed well. Turn into a large oiled casserole dish. Top with remaining cheese. Bake at 350 degrees F for 30 minutes.
