California Alfredo Pizza Sandwich

It’s amazing what can happen in a hospital. For Kevin, that means his mind begins to race with all new kinds of amazing recipes. Kevin’s Kreations are always delicious! I will have to say that this “kreation” ties as grand prize winner with his secret recipe for chicken enchiladas. Kevin created this during his hospital stay at Parkland Hospital in Dallas while he was undergoing a seizure study. He is dedicating his new Kevin Kreation, California Alfredo Pizza Sandwich, to his paternal grandfather, Gleen Wilson. He is the one who introduced Kevin to pizza, in particular Mazzios pizza. Eating at Mazzios was a weekly event for Gleen and Yvonne. Oftentimes, they would invite Kevin and his brother Jace to eat with them. Kevin’s favorite pizza from Mazzios was California Alfredo. Naturally, that would be the pizza sandwich he would create. This is truly one of the best sandwiches I have ever eaten. Everyone in the family gave it two thumbs up. He won’t be sharing all of his secret recipes, but this one he gladly makes available to the public.
Ingredients:
3 (9 oz. pkgs) Mama Mary’s Thin and Crispy 7 in. Pizza Crusts
2 tsp. (divided into 8 servings of ¼ tsp each) + 1 Tbsp Olive oil
8 tbsp Parmesan cheese, divided into 8 servings of 1 tbsp each
1 (16 oz pkg) Shredded Mozzarella Cheese
1 (8 oz pkg) Chicken Fajitas Strips (John Soules Foods, Fully Cooked Chicken Breast Strips with Rib Meat)
½ of a 2.8 oz bag of Oscar Mayer Real Bacon Recipe Pieces
1 tomato, diced
2 mushroom slices, diced
½ (14.5 oz) jar Prego Alfredo Sauce, Artisan Three Cheese
Directions:
Preheat oven to 350 degrees F. With the tablespoon of olive oil, grease the bottom of a baking sheet. Drizzle ¼ tsp. olive oil over the back side of pizza crust. Spread evenly. Sprinkle 1 tbsp of Parmesan cheese on top. Place pizza crust, cheese side down on baking sheet. Repeat with the remaining three crusts. Place ½ c. Mozzarella cheese on top of each crust. Divide chicken strips into four servings. Place each serving on top of the cheese of each crust. Sprinkle one tbsp. of bacon bits over each one next. Then, evenly sprinkle tomato pieces and mushroom pieces. Add another ½ c. Mozzarella cheese to each pizza sandwich. Top each one with remaining pizza crusts. On top of crusts, drizzle ¼ tsp. olive oil each and sprinkled with 1 tbsp Parmesan cheese each. Bake for 7 minutes. Cool slightly and cut into 4 wedges. In the meanwhile, heat Alfredo sauce in microwave. Divide evenly into 4 small serving bowls. Dip sandwich wedges into Alfredo sauce as you eat. Enjoy!
