Cuban Pork Sandwiches with Cilantro Mayonnaise

Who has more cookbooks and cooking magazines than most libraries and bookstores? Chef Kevin. His goal is to cook at least one recipe from each one. With that said, the first recipe for him to cook from Triple Slow Cooker Entertaining is Cuban Pork Sandwiches with Cilantro Mayonnaise. Wow! What a great choice! It’s easy, flavorful, and delicious! 1 onion, sliced
4 lb boneless pork shoulder blade (butt) or sirloin roast
2 tbsp packed brown sugar
5 cloves of garlic, minced
2 tsp. ground cumin
½ tsp. salt
1 tsp. black pepper
Juice of 1 ½ limes
½ c. water
2 tbsp fresh cilantro
¼ c. Real Mayonnaise
1 tbsp freshly squeezed lime juice


1 (8 ct. pkg) Hamburger buns
Place onion slices evenly in a slow cooker or Dutch oven (Kevin used his cast iron Dutch oven). Place roast on top. In a small bowl, combine brown sugar, garlic, cumin, salt and pepper. Press into roast. Pour lime juice and water around the roast. Cover and cook accordingly: If using a slow cooker 8-10 hours; in oven bake at 350 degree F for 4 hours or until done. When done, use two forks to shred pork.
For cilantro mayo, in a small bowl, combine cilantro, mayo, and lime juice. Spread on one slice while placing an ample amount of shredded pork on the other side.
