Bacon Pasta

BACON. Need we say more? Need we say this is the most delicious pasta we’ve ever tasted? Need we say this dish is one we will serve when we have company? Need we say this will definitely be added to Kevin’s menu when he opens his own restaurant? We have only one word to describe it: RAPTUROUS! Need we say more? Thank you Kevin for wanting a Mr. Food cookbook. Thank you, Mr. Food, for including this recipe in your cookbook The Best of Mr. Food, Homestyle Quickies. Thank you, Kickstarter Backers for bringing us Kevin’s version of “Bacon Pasta.”

12 oz. pkg angel hair pasta
15 bacon slices
½ c. sliced fresh mushrooms
2 cloves garlic, minced
1 c. + ½ c. grated fresh Parmesan cheese
1 c. whipping cream
½ tsp. freshly ground black pepper

In a large cast iron skillet, fry bacon until crisp. While bacon is cooking, cook pasta according to package directions. Drain pasta. Remove bacon and drain on paper towels, reserving 2 Tbsp dripping in skillet. Crumble bacon in large pieces. Set aside. Saute sliced mushrooms and garlic in reserved drippings 3 minutes or until tender and fragrant. Stir in pasta, 1 c. Parmesan cheese, whipping cream, and pepper; simmer over medium-low heat until well-blended. Stir in bacon. Sprinkle remaining cheese on top. Serve with a salad.  (A cast iron skillet makes all the difference.  If you don’t have one, invest in one NOW!  They are relatively inexpensive and worth it!)
