Walnut-Cherry Cookie Bars

Perfectly delicious!  This is what these cookie bars are! This dessert is wonderful because they are not too sweet.  We shared this dessert with several of our family and friends.  This recipe was created by Diane Vespoli and was showcased in the Winter 2012 Cooking Club magazine.  It’d be perfect to serve at a bridal shower.  Thank you Kevin Wilson for making these.  Thank you Kickstarter Backers for backing this recipe!
1 ¼ c. coarsely chopped walnuts, toasted*
2 ¼ c. all-purpose flour
½ c. sugar
¾ tsp. baking soda
¼ tsp. salt
¾ c. plus 2 tbsp butter, chilled, cut up
1 egg, beaten
1 tsp vanilla extract
1 (18 oz) jar cherry preserves
Heat oven to 350 degrees F. Grease a 9-inch square baking pan. Pulse walnuts in food processor until chopped to medium consistency. Add flour, sugar, baking soda, and salt; pulse to combine. Add butter; pulse until mixture resembles coarse crumbs. Add egg and vanilla; pulse until blended and moistened. Press 3 cups of the crumb mixture into the bottom of pan; spread with preserves. Sprinkle remaining 2 c. crumb mixture over preserves, squeezing slightly to form clumps. Bake 40 to 45 minutes or until lightly browned. Cool on wire rack.
*To toast walnuts, place on baking sheet; bake at 350 degree F for 6 to 8 minutes or until pale brown and fragrant. Cool.
