Splendid Sunday Strawberry and Banana Yogurt Parfait

Kevin Wilson’s Home Cooked Cuisine to the rescue!  It was my turn to take a breakfast treat to those in my Sunday School class.  I asked Kevin if he could help me concoct a special parfait that would be delicious and slightly healthy. This parfait received rave reviews from everyone in the class.  Thank you Kevin for lending your creativity to this wonderful parfait and thank you Kickstarter Backers for backing this recipe!


1 (8 oz) Cream Cheese

1 (8 oz) Cool Whip

1/3 c. Nonfat plain yogurt

1 (16 oz) tub of frozen strawberries with sugar, defrosted and pureed

1/2 tsp. Strawberry extract

4 bananas

juice of 1 lemon

2 Tbsp. Barlean’s Flaxseed, Chia Seed, and Coconut Blend

Reddi Whip

8 mini Hershey Bars, split in half


Whip together the cream cheese, cool whip, yogurt, strawberries, and strawberry extract.  Slice bananas.  Squeeze juice of lemon over bananas.  Toss.  Add flaxseed, chia seed, and coconut mixture over bananas.  Toss.  Place 4 spoonfuls of strawberry blend in 16 parfait glasses.  Drop 4 slices of bananas on top.  Add one last spoonful of strawberry mixture per glass.  Decorate with Reddi Whip and a half of a mini Hershey bar.
