Cast Iron Hunter Style Chicken

This was a surprisingly wonderful dish that was loved by all.  There’s nothing better than cooking with a cast-iron skillet! Thank you, Kevin for cooking this great dish!  Thank you, Kickstarter Backers, for backing his version of “Hunter Style Chicken” from Blessings~Christ Episcopal Church, Tyler, Texas. 


2 lbs. chicken tenders

8 slices bacon

1 onion, thinly sliced

1 lb can stewed tomatoes

1/3 c. Heinz 57 sauce

2 tsp. sugar

Directions:  Cut bacon into 1 inch pieces.  Saute in large skillet until partially cooked.  Add onion and saute until tender.  Remove onion and bacon.  Set aside.  Drain drippings from skillet, reserving 2 T. drippings.  Brown chicken pieces in reserved drippings. Combine bacon and onion with stewed tomatoes, Heinz 57 sauce and sugar.  Pour over chicken, cover, simmer 40-45 minutes or until tender.
