Spinach Hummus Dip

Kevin is all about healthy eating, though he enjoys splurging on Dr. Pepper and sweets at times.  He recently purchased The 20/20 Diet Plan written by Dr. Phil, not to go on the diet, but to try some of the recipes in the book.  This is one we tried, and not only is it packed with nutrition, it is packed with flavor.  Dr. Phil suggested using it as a dip for apple slices.  It is great that way.  We also dipped pita chips in it, and it is fantastic that way as well.  Kevin’s version of “Spinach Hummus” is brought to you by Kevin’s Kickstarter Backers.


3 apples (one per serving or one per day), sliced with skin still on

1 can garbanzo beans (can use sodium free), drained

6 tsp. extra virgin olive oil

3 garlic cloves, minced

3 tbsp. lemon juice

6 tbsp. water

2-3 cups fresh spinach


In a blender or food processor, puree chickpeas, olive oil, garlic, lemon juice, water, and spinach. Kevin’s version makes for servings or a 3 day supply.  Refrigerate leftovers.
