Cheesy Potato Casserole
A brother plus a Brookshire Bros. gift card = cheesy potato casserole. Knowing Kevin’s passion for cooking, Kevin’s brother Jace gave him a gift card to Brookshire Bros., our local grocery store, for Christmas last year. Just the other day, Jace helped Kevin select a special recipe where Kevin could go to the store and use his gift card. They chose this amazing casserole. It was a hit with everyone! Ingredients:
1 (32 oz) pkg. hashbrowns
1 can cream of chicken soup
1 (12 oz) pkg shredded Cheddar cheese
1 (8 oz) carton sour cream
1 tsp. salt
1 small onion, finely chopped
1 stick melted butter, divided
2 c. cornflakes
Directions:
Place thawed potatoes on bottom of greased 9 x 13 baking pan. Combine soup, cheese, sour cream, salt, oniom, and 1/2 melted butter. Pour over potatoes. Top with cornflakes and drizzle remaining melted butter over all. Bake in 350 degree oven for approximately 45 minutes. Be careful to not let the cornflakes burn.
