Quick Pepper Jack Barbecue Ham Hoagies

What can I do with leftovers?  This the question posed most often following Thanksgiving, Christmas, and Easter, a time when dinner tables are overflowing with turkeys, hams, and more.  If you are looking for something to make with leftover ham that is quick, easy, and gives a different flavor than the traditional meal, then this recipe is for you.  Kevin’s version of “Quick Pepper Jack Barbecue Ham Hoagies”from Texas Hometown Cookbook is brought to you by his Kickstarter Backers.

Ingredients:

1/2 c. barbecue sauce

1 tbsp mustard

1 clove garlic, minced

2 tbsp onion, minced

1 lb. leftover ham, chopped

4 slices pepper jack cheese

4 French rolls or similar roll

Directions:

In a saucepan over medium heat, combine all ingredients, except rolls.  Stir and heat until cheese is melted and ham is evenly coated.  Serve hot on French rolls.
