Garth Brook’s Breakfast Bowl

December 30, 2015

Garth Brooks might have friends in low places, but what he might not realize is that he’s got a friend in Nacogdoches, Texas, who as a young eight-year-old boy prayed for him daily for a solid year.  When Kevin was only 8 years old, he underwent chemotherapy for a brain tumor.  Since his chemotherapy was in Dallas, he would listen to country music on the 3.5 hour drive to Dallas and the 3.5 hour return trip home.  We did this on a weekly basis for several months before taking advantage of Angel Flight.  However, it was during this time that Kevin began praying diligently for Garth Brooks, George Strait, and Joe Diffy.  Why he chose these three, I’ll never know, but what was important was that he faithfully prayed each evening before bed for God’s blessings and presence to be upon these three talented country music performers.  Needless to say, it was with great joy that Kevin cooked “Garth’s Breakfast Bowl” from Home Cooking with Trisha Yearwood.  Kevin, his dad, and brother loved this breakfast bowl!  Without a doubt, it’s delicious and hearty!  Kevin’s version of this recipe is brought to you by his Kickstarter Backers.

1 tbsp butter

8 large eggs

1 tbsp half-n-half (optional)

1 16 oz. bag tator tots

1 lb pork sausage

1 pound bacon

1 9 oz pkg cheese and roasted garlic torellini

8 oz. sharp Cheddar cheese, grated

Fry sausage in one pan until well-done.  Fry bacon in another skillet until well done.  Cook tortellini according to package direction.  Heat tator tots according to package directions.  Beat half-n-half with the eggs.  Melt butter in frying pan.  Scramble eggs until desired consistency.  In a large bowl, layer ingredients according to desired tastes.
