Honey Kissed Fresh Fruit Salad

Will your New Year’s resolution include eating healthy?  If so, then this recipe will be perfect for you!  The honey dressing highlights the natural flavor and goodness of each fruit.  What we love most about this salad is its antioxidant properties.  What better way to start the new year than to prepare this fruit salad for you and your family.  Lots of love and kisses in each bite.  Kevin’s version of “Hawaiian Fresh Fruit Salad”comes from Home Cooking with Trisha Yearwood and is brought to you by his Kickstarter Backers.

Ingredients:

3 c. of your favorite fresh fruit such as:

bananas, blueberries, pineapple, blackberries, raspberries, mango, strawberries, kiwi, cuties/clementines, watermelon, etc.

(We used blueberries, pineapple, blackberries, raspberries, and cuties.)

1/4 c. fresh squeezed lime juice (about 2 limes)

1 1/2 tbsp. honey

1/2 tsp. ground ginger

Directions:

Mix the fruit in a salad bowl.  Mix the lime juice, honey, and ginger in a small bowl.  Pour the dressing over the fruit and lightly toss.  Serve immediately if you use bananas.  However, if you make the salad ahead of time, hold out the bananas until just before serving.
