MK’s Sesame Beef Stir Fry with Chinese Fried Rice

Thanks to Kevin and his friend Matthew, our family now has an all new favorite dinner!  Kevin and Matthew found the recipe for the beef stir fry, cooked it on Friday, and gave it rave reviews.  Since the reviews were so spectacular, we had to try it for ourselves, especially since we had most of the ingredients already in the kitchen cabinets, right?  So, for lunch today, Kevin cooked this meal once again, and once again, he received rave reviews.  In fact, it is at the top of our list of favorite dishes.  Kevin’s version of the beef stir fry comes from Cooking Light Best Low-Fat Main Dishes while his version of the fried rice comes from


1 tbsp bottled minced ginger or ginger powder

1 tbsp. bottled minced garlic

3 tbsp. lower-sodium soy sauce

2 1/2 tsp. dark brown sugar

1 tsp. crushed McCormick salt free Southwest seasoning

1/8 tsp. cayenne pepper

1 1/2 tbsp. dark sesame oil

1 1/2 lb. top round steak, thinly sliced

3 green onions, sliced (white and light green parts only) or 1/2 c. diced onion

4 c. bagged baby spinach leaves

1 1/2 tbsp. sesame seeds


Combine first 5 ingredients in a small bowl.  Whisk.  Heat a wok over high heat.  Add oil to pan; swirl to coat.  Add half of beef to pan; cook until browned.  Remove beef from pan and cook second batch.  Add onions to pan; cook 1 minute.  Add soy sauce mixture; cook 1 minute.  Return beef to pan; cook 1 minute.  Stir in spinach; cook another minute.  Top with sesame seeds.  Serve over a bed of Chinese fried rice.

Chinese Fried Rice:

2 c. cooked 5 min. Minute Maid rice

2 eggs

3/4 c. finely chopped onion

2 tbsp. lower sodium soy sauce

1/2 tsp. lower sodium soy sauce

2 tbsp. dark sesame oil

1/2 tsp. dark sesame oil

1/2 c. peas and carrots

Heat 1 tbsp sesame oil wok.  Fry onion until soft.  Remove.  Slightly scramble 2 eggs, 1/2 tsp. soy sauce, and 1/2 tsp. sesame oil.  Fry in wok.  When egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.  Heat remaining 1 tbsp. sesame oil.  Add rice, 1 tbsp. soy sauce, onions, carrots and peas.  Fry for 3 minutes. Fold in eggs.  (Add additional soy sauce to taste.)
