Eclair Cake

Ten thumbs up for this eclair cake!  Kevin made this cake for special company, and it was loved by all five of us!  This recipe from From Our Own Hands is brought to you by his Kickstarter Backers.

Ingredients:

1 box graham crackers

2 pkg. French vanilla instant pudding

3 c. milk

1 (8 oz) tub Cool Whip

Frosting:

1 c. sugar

1/3 c. cocoa

1/4 c. milk

1 stick margarine

1 tsp. vanilla

Directions:

Mix pudding and milk; fold in Cool Whip.  Into buttered 9x13d inch pan, place a layer of graham crackers.  Spread 1/2 pudding on top, then follow with another layer of crackers, and top with second 1/2 of pudding.  In the meantime, bring sugar, cocoa and milk to a boil; cook 1 minute, stirring constantly.  Stir in margarine and vanilla.  Cool, then spread over dessert.  Refrigerate several hours.
