Key Lime Cake

Moist and juicy!  Delicious!  Perfect for Easter!  I’m so thankful Kevin made this cake!  You can make this cake in a 9 x 13 pan or 2 round pans and layer it.  Either way, you’ll have an amazing taste loaded with tons of flavor!  This recipe comes from and is brought to you by his Kickstarter Backers.

Ingredients for the Cake:

1 box lemon cake mix

1 1/3 c. vegetable oil

1/2 c. pineapple juice

1/3 c. key lime juice

4 beaten eggs

1 (3.4 oz) box lime Jell-O

1-2 tsp. unsalted butter, room temperature

2-3 tsp. all-purpose flour

4-5 drops of green food coloring to intensify the green color

Ingredients for Icing:

4 1/2 c. confectioner sugar

1 (8 oz) cream cheese

2 Tbsp. heavy whipping cream

1 stick unsalted butter, room temperature

3 tbsp. key lime juice


Preheat oven to 350 degree F and add all ingredients, except butter and flour, to a bowl and mix well.  Lightly butter and flour 9 x 13 pan.  Pour batter into pan.  Bake approximately 25-30 or until lightly brown and toothpick comes out clean.  Remove from oven and cool.  Now make the icing.  Add butter and cream cheese to mixing bowl and mix until incorporated.  Add in confectioner sugar one cup at a time and mix in between.  Then, add heavy whipping cream and lime juice and mix until smooth.  Ice cake.  Enjoy each bite!
