Orange Salmon with Broccoli

Easy.  Delicious.  Healthy.  Nutritious.  And most of all, aromatic. Kevin’s version of Hungry Girl’s “Orange Salmon With Broccolini” from Redbook, April 2016 ed. makes for a filling lunch or dinner.  This recipe is brought to you by Kevin’s Kickstarter Backers.


1 large orange

2 cloves of garlic, minced

1/8 tsp. Kosher salt

1 c. frozen broccoli

1/2 c. sliced onion

1/8th of a red pepper, thinly sliced

2 (4 oz) raw skinless salmon fillets

dash paprika

dash cayenne


Heat oven to 375 degrees F.  Place a large piece of heavy-duty foil on a baking sheet.  Cut the orange in half widthwise.  Cut 2 thin slices from the cut side of each half.  In a small bowl, squeeze the juice from the remaining halves.  Add the garlic and salt; mix well.  Divide onion, red pepper, and broccoli into two parts.  Place one part on one side of the foil and the other part on the other side of the foil.  Lay the salmon fillets over the veggies.  Drizzle the salmon and veggies with the orange juice mixture.  Top each fillet with 2 orange slices, and then sprinkle with paprika and cayenne.  Cover with another large piece of foil.  Fold together and seal.  Bake for 20 minutes or until the salmon is cooked through and the veggies are tender.  Cut the packet to release hot steam before opening fully.  Serve.
