Cast Iron Skillet Asparagus with Texas Pecans

If you like asparagus, then this is the perfect recipe for you!  It’s delicious and nutritious!  The toasted pecans add extra flavor. Kevin’s version of this recipe from Texas Hometown Cookbook is brought to you by his Kickstarter Backers.


1/2 c. pecan halves

1 1/2 Tbsp olive oil, divided

1 lb fresh asparagus

1/4 c. water

1/4 tsp. salt

1/4 tsp. coarse ground pepper


In a cast-iron skillet over medium-high heat, brown pecans in 1/2 tbsp olive oil until lightly browned.  Place on a paper towel.  In same skillet, saute asparagus in 1 tbsp. olive oil.  When edges are browned, add salt, pepper, and water and cook until water boils off, or remove sooner for crispier vegetables.  Transfer to serving dish and sprinkle with pecans.
