Sensational Sugar-Free Strawberry Pie

Sugar-free?  No way!  At least that would be your first thought after your first bite of this extremely delicious strawberry pie.  I am thankful Kevin wanted to find a dessert recipe for those he loves who need to eat sugar-free.  This recipe definitely meets the high standards he has set for his Home Cooked Cuisine.  Kevin’s version of “Crustless Lemon Cream Pie” from Mr. Food’s Test Kitchen Everyday Diabetic Recipes is brought to you by his Kickstarter Backers.


2 pkg (4-serving size) sugar free strawberry gelatin

2 c. boiling water

1 c. ice cubes

1 (8 oz.) tub lite Cool Whip, thawed


In a large bowl, dissolve gelatin in boiling water; add ice cubes and stir until melted.  Add whipped topping, folding gently.  Pour into a 9-inch deep dish pie plate.  Cover and chill at least 3 hours, or until set.  May use different flavored gelatin such as lemon.
