K-Dubs Dutch Oven Bacon Ranch Potatoes

The master is at work !  Kevin once again created an outstanding dish that was loved by all who had the privilege to eat it.  Kevin created this while in Parkland Hospital in Dallas in the fall of 2015 while undergoing a seizure study.  So glad he cooked it today.  Good news to all:  he’s sharing his recipe!  Now, it’s no longer a secret!  You’ll be glad he did once you make it and taste it!  Thank you Kickstarter Backers for supporting this recipe!


6 russet potatoes, washed and thinly sliced

1 yellow onion, thinly sliced

1 (1 oz) pkg Hidden Valley Ranch Salad Dressing and Seasoning Mix

1 (16 oz) pkg frozen corn

8 slices thick bacon

1 tomato, peeled and diced


Preheat oven to 375 degrees F.  In a Dutch oven, place potatoes.  Sprinkle seasoning mix over potatoes.  Add onions.  Sprinkle corn on top.  Top with bacon.  Place lid on top and place in oven and cook for 1 hour.  Remove lid, turn oven to 450 degrees, and cook an additional 30 minutes or until bacon is somewhat brown and crispy.  Sprinkle tomatoes on top before serving.
