Summertime Fresh Vegetable Pizza

Summertime is almost here and garden fresh tomatoes will be ready for the pickin’!  There’s no better tomato than one that is home-grown.  You can use your home-grown tomatoes to make this pizza.  It’s easy and it’s extremely tasty!  And, if you like tomatoes year-round, just pick up a few at your local grocery store and make this pizza anytime of year!  Thank you Kevin for making such a yummy and healthy pizza!  Thank you Kickstarter Backers for supporting Kevin’s version of “Tomato Pizza” from Organic Farm and Garden, Vol. 1.

Ingredients:

1 (10 oz) Boboli Thin Crust Pizza Crust

1 (6 oz) Tyson Grilled and Ready Fully Cooked Chicken Breast Strips

1 tbsp olive oil, divided

1 tsp. minced garlic

black pepper to taste

2 tbsp. minced fresh basil (dried if fresh is not available)

1 tsp. minced fresh oregano (dried if fresh is not available)

1/2 med-sized red and green peppers, thinly sliced

2 large homegrown tomatoes, sliced (or from grocery store)

16 oz. low-fat mozzarella, shredded

1/4 c. parmigiano cheese

Directions:

Place the crust on a pizza pan or baking sheet.  Combine 1 tbsp. olive oil and the garlic in a small bowl.  Add pepper to taste.  Let stand for a few minutes.  Brush the olive oil and garlic mixture on the pizza crust.  Slice the tomatoes and place on top of the oiled crust.  Sprinkle with basil and oregano.  Add peppers.  Add chicken.  Cover with the cheeses.  Bake in 400 degree F oven for 10-15 minutes or until cheese is thoroughly melted.
