Kevin’s Kit Kat Colorful M&M Candy Bar Birthday Cake

About a month before his birthday each year, Kevin begins deliberating as to what kind of cake he wants for his special day.  Googling different kinds of cakes, we came across a large number of Kit Kat cakes which caught his attention since Kit Kats and M&Ms are his favorite candy.  We decided we’d try the one from Kitchenmagpie website since we had never before baked a cake using coffee.  This cake was rich and decadent!  We will definitely be using this recipe again in the future!  We liked it so much that we are interested in trying more of Karlynn Johnston’s recipes for our own pleasure.  This is our version of Karlynn’s “Willy Wonka Birthday Cake” and is brought to you by his Kickstarter Backers.

Ingredients for Cake:

  • 3 ounces semisweet chocolate
  • 1½ cups hot brewed coffee
  • 3 cups sugar
  • 2½ cups all-purpose flour
  • 1½ cups unsweetened cocoa powder (not Dutch process)
  • 2 teaspoons baking soda
  • ¾ teaspoon baking powder
  • 1¼ teaspoons salt
  • 3 large eggs
  • ¾ cup vegetable oil
  • 1½ cups well-shaken buttermilk
  • ¾ teaspoon vanilla

Ingredients for Frosting:

  • 1 cup salted butter
  • ½ cup of unsweetened cocoa
  • 3 one ounce squares of melted then cooled semi-sweet chocolate
  • ½ tsp instant coffee
  • 1-2 tbsp heavy cream
  • 2¼ – 3 cups powdered sugar

Ingredients for Other:

20 snack size Kit Kat bars

1 large bag of M&Ms

Instructions for Cake:

  1. Preheat oven to 300 degrees F.
  2. Get the chocolate and chop it up.
  3. Melt the chopped up chocolate in the hot coffee until it is completely dissolved and set aside.
  4. Whisk together the dry ingredients.
  5. Beat the eggs for 2-3 minutes, until they are thick and lemon colored. Add the oil, buttermilk and vanilla.
  6. Next, add the coffee/chocolate mixture slowly.
  7. Finally, add the dry ingredients and mix at a moderate speed until they are combined completely.
  8. Grease and parchment line your cake pans.
  9. Bake at 300 degrees until done.

Note:  *There is enough batter for 3 layers.  Too, be prepared to trim the layers, if needed, so that the Kit Kats work as a fence to hold the M&Ms.  Cakes are easier to slice if frozen.  Kit Kats are easier to maneuver if frozen as well.

  1. Melt the chocolate squares in the microwave until smooth.  Set aside to cool.
  2. Whip the butter with a mixer until light and fluffy.
  3. Add in the cocoa, beating until combined.
  4. When the chocolate is cool, add it to the butter.
  5. Add the instant coffee to one tablespoon of cream, and then add to the butter mixture.
  6. Put in the powdered sugar one cup at a time, beating until combined. Adding more or less according to the degree of desired sweetness.
  7. Adjust the thickness/texture by using another tablespoon of cream, adding it slowly until the texture you want is achieved.

Preparation:

Frost the top of the first cake layer.  Add the second layer.  Frost top and sides.  Position Kit Kats around the sides of the cake.  Tie a ribbon around the candy bars to hold them in place.  Sprinkle M&Ms on top.  Add candles for the birthday person, sing “Happy Birthday,” and then have him/her make a wish and blow out the candles.  Slice the cake thinly since it is so rick and decadent, giving the birthday person the first slice.  Share with others so everyone can enjoy!
