Kevin’s Sausage Potato Cake Casserole

Our family embraces the tradition of cooking the birthday person’s favorite dinner on his or her special day.  As Kevin’s day was nearing, he decided he wanted me to cook one of his special creations, one we had yet to make.  I am so glad he wanted this meal.  It was fabulous and loved by all!  Once again, he created a winning dish!  Healthy, it’s not; but delicious, it definitely is!  And, Kevin is sharing this recipe in honor of everyone who helped make his 24th birthday extra special! 4 large potatoes, diced

3 cloves garlic, minced

¼ tsp. tabasco sauce

1 onion, diced

1 green bell pepper, diced

4 oz pkg shredded Velveeta

6 oz  Sharp shredded cheese, shredded

1 lb Owens sausage

1 can Rotel tomatoes

In a Dutch oven, fry sausage.  When cooked thoroughly, remove meat with a slotted spoon.  Stir diced potatoes in the sausage grease.  Layer garlic, onion, and bell peppers.  Sprinkle Velveeta.  Sprinkle Tabasco sauce.  Add sausage.  Lastly, pour Rotel tomatoes on top.  Put lid on top.  Bake in 350 degree F. oven for approximately 30 minutes or until potatoes are soft.  Remove lid.  Sprinkle cheddar cheese on top.  Return to oven, uncovered for 3-5 minutes, or long enough for cheese to melt. IMG_6967
