Cauliflower-Crust Veggie Pizza

Pizza Hut, Dominoes, Little Caesars, and other brand pizzeria joints have nothing on this homemade veggie pizza.  If veggie pizza is your forte, then you will love this pizza, especially the crust!  Kevin’s version of “Cauliflower-Crust Pizza” from Good and Fresh is brought to you by his Kickstarter Backers.


1 head of cauliflower florets

1 egg lightly beaten

1/4 c. shredded Italian cheese blend

1/4 c. freshly grated Parmesan cheese

1/4 c. Panko bread crumbs

1/2 tsp. dried Italian seasoning, crushed

1/4 tsp. salt

1 c. sliced fresh mushrooms

1 c. sliced green peppers

1 c. red onion, sliced thinly

1 tsp. olive oil

3/4 c. pizza sauce

1 c. shredded Italian cheese blend

Snips of fresh basil and oregano

1 brother with strong muscles


In batches, place cauliflower in a food processor.  Pulse until cauliflower resembles the texture of couscous. Place a baking stone or baking sheet in oven.  Preheat oven to 425 degree F.  Place cauliflower in a microwave-safe dish with 2 tbsp. water.  Cook, covered, 3-4 min. or until tender, stirring once or twice.  Cool.  Transfer to a 100% cotton flour sack towel.  Wrap towel around cauliflower and squeeze dry.  This is a critical step so you need to involve a brother who has strong muscles to get the extra water out after you do your part.  (Smiley face!) (Kevin squeezed as much as he could, and then I squeezed as much as I could, and to get the remainder water out, Jace’s brother Kevin helped until it was as dry as a bone.)  In a bowl, stir together drained cauliflower and next 6 ingredients.  On parchment paper, pat cauliflower mixture into a crust about 12 inches in diameter.  Carefully transfer crust on paper to the preheated pizza stone or pan.  Bake 12 to 15 minutes or until crisp and starting to brown.  Meanwhile, in a large skillet, cook the mushrooms, green pepper, and red onion in the olive oil until crisp tender.  Spread pizza sauce on baked crust.  Top with cooked vegetables.  Sprinkle with snips of fresh basil and oregano.  Sprinkle with remaining cheese.  Bake 5 minutes or until heated and cheese is melted.
