Wheel of Fortune Cake

July 3, 2016

Kevin and his maternal grandmother have something in common, they both love the game show “Wheel of Fortune.” For his birthday this year, he bought a “Wheel of Fortune” cookbook with the money she gave him; in turn, he made this cake for her for her birthday this year.  It was fun to make, and the homemade buttercream icing is out-of-this-world!  Thank you Kickstarter Backers for supporting Kevin’s version of Mr. Food Test Kitchen  Wheel of Fortune Collectible Cookbook’s “Stacked Spin-Tacular Party Cake.”

1 pkg white cake mix, prepared according to package directions

6 c. confectioners’sugar

2 sticks butter, softened

1/2 c. vegeatable shortening

3 tbsp milk

1 tsp. vanilla extract

1 pkg. mini M&Ms, colors separated, hold out about 80 of each color, mix the others in a bowl

Preheat oven to 350 degrees F.  Coat 2 (8-inch) cake pans with cooking spray.  Divide prepared cake batter evenly into both pans.  Bake 30-35 minutes, or until done.  Let cool 15 minutes, then remove cake from pans to wire rack to cool completely.  In a large bowl, with an electric mixer, beat remaining ingredients except chocolates, 1-2 minutes or until creamy.  Place 1 cake layer on platter and spread with a think layer of frosting.  Sprinkle the mixed M&Ms on top.  Spread a thin layer of icing on the bottom of second layer.  Place gently on top of M&M layer.  Frost the top and sides of the cake.  Lightly score the top of the ake in 10 even wedges.  Decorate each wedge with one color of candy coated chocolates, alternating each wedge with a different color.  You can add candles or lollipop sticks in each cake wedge to resemble the spokes on the wheel, if desired.
