Steak Fajitas with Fresh Lime

Texas is known for its Tex-Mex food which includes tacos, nachos, enchiladas, and fajitas.  Kevin tried this new fajita recipe that is subLIMEly wonderful!  Not only was the meat delicious, but the cooked onions were better than any we’ve ever eaten.  Perfect flavors for a perfect Tex-Mex dish!  Thank you Kickstarter Backer for supporting Kevin’s version of this recipe from Bon Appetit, June 2008 ed. 


2 (12 ounce) top round steak, each halved

3 tbsp. fresh lime juice, divided

1 large onion, halved lengthwise, thinly sliced

4 large garlic cloves, minced

1 tbsp. ground cumin

1 tsp. finely grated lime peel

12 grape tomatoes

12 tortillas (corn or flour)


Arrange steaks in 13x9x2 inch glass baking dish; sprinkly with salt and pepper.  Combine 2 tbsp lime juice and next 5 ingredients in medium bowl.  Pour onion mixture over steaks; turn to coat evenly.  Let marinate 10 minutes or longer.  Heat iron skillet.  Add steaks with onion mixture.  Cook steaks to liking (medium rare, medium, well-done).  Transfer steak and onions to work surface.  Add tomatoes and remainder lime juice to skillet.  Cook for a couple of minutes.  Remove.  Slice steak across grain into 1/2 inch-thick strips.  Serve with tortillas, avocado, lettuce, cilantro, sour cream, cheese, picante sauce, and any other desired topping.
