Perfect Brisket Rub

The perfect time to purchase a brisket is when they are on sale.  And the perfect rub for the brisket is this oneThis was a hit with everyone!  Have it your way by serving it on buns, in a salad, or on a plate with baked beans and potato salad.  Thank you to Kevin’s Kickstarter Backers for backing his version of “Barbecue Rub”from Saveur, July 2009, ed. 


1 tbsp. kosher salt

1 tbsp dark brown sugar

1 tbsp paprika

2 tsp. garlic powder

2 tsp mustard powder

1 tsp. black pepper

1/2 tsp. ground coriander

1/2 tsp. ground cumin

1/2 tsp. dried thyme

1 brisket

Mix all ingredients for the rub.  Rub into the brisket.  Refrigerate overnight.  Place in 250 degree F oven and cook for about 8 hours or until fork tender.
