Million Dollar Appetizer

Who wants a dollar when they can have a million dollars?  Same thing goes with dips.  Who wants the traditional Mexican layer dip when they can have this Million Dollar Appetizer?  Kevin made this dip today for our good friend who came to visit us from New Mexico.  It was a hit with everyone!  I bet if he made this and served it in his restaurant, he’d easily make a million dollars from the number of orders he’d had!  Kevin’s version of “Layered Mexican Appetizer”from Little Book of Holiday Appetizers is brought to you by his Kickstarter Backers.


1 can refried beans

1 (6 oz) can tomato paste

1 (4 oz) can chopped green chiles, drained

2 ripe avocados, peeled and coarsely chopped

2 small tomatoes, chopped

2 tsp. lemon juice

1/2 c. sour cream

1/2 c. mayonnaise

1 (1 1/4 oz) pkg taco seasoning

1 small green pepper, seeded and chopped

1 (4 1/2 oz) can chopped black olives, drained

1 (2 oz) jar diced pimiento, drained

2 c. (8 oz.) extra-sharp Cheddar cheese, freshly grated


Combine bean dip, tomato paste, and green chiles; spread in a pie plate.  Combine avocado, chopped tomato, and lemon juice; toss and arrange evenly over bean mixture.  Set aside.  Combine sour cream, mayo, and taco seasoning mix.  Spoon over avocado mixture.  Combine green pepper, black olives, and pimientos.  Top with cheese.  Cover and chill 1 to 2 hours.  Serve with tortilla chips or on a bed of shredded lettuce!
