ABC Healthy Snack Bites

Are you looking for a healthy cookie?  We think we’ve created one.  It’s yummy, yet not addictive like most cookies.  We’ve substituted ingredients such as applesauce for the sugar and coconut flour for all-purpose flour.  Too, we’ve added a few ingredients to help make each one filling where you only need just one or two to satisfy your sweet tooth. Thank you Kickstarter Backers for supporting Kevin’s revision of “Banana Chocolate Chip Cookies” recipe from Mom’s Favorite Recipes.

Ingredients:

8 oz original Applesauce

1 ripe Banana, mashed

3/4 c. Chocolate Chips

2 tsp. Cacao Nibs

1 Tbsp. flax, chia, and coconut blend

1 c. Coconut flour

1/3 c. butter flavored Crisco

1 egg

1/4 tsp. salt

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. vanilla extract

Directions:

Blend applesauce, egg, and Crisco.  Mix in bananas.  Add vanilla.  Whisk together flour, salt, baking powder, and baking soda.  Add to wet mixture.  Mix well.  Fold in chocolate chips, cacao nibs, and flax, chia, and coconut blend.  Bake on greased cookie sheet approximately 7 minutes in a 350 degree oven.  Makes about 3 dozen cookies.  Each cookie has about 7 g of carbohydrates.
