Cheesy Lasagna Roll-Ups

These creamy, cheesy roll-ups are splendidly delicious! Serve them as the main dish or as a side.  Kevin’s version of this recipe comes from Gatherings A West Texas Collection of Recipes, a cookbook his Aunt Shirlene gave him from her time in West Texas. 12 lasagna noodles

3/4 c. chopped onion

2 tbsp. butter

1 (10 oz) pkg of frozen chopped broccoli

1 1/4 c. cottage cheese

1 1/4 c. shredded cheddar cheese

1/8 tsp.  garlic powder

1/4 tsp. salt

1/8 tsp. pepper

1/2 c. grated Parmesan cheese

1 Tbsp. flour

1 (16 oz jar) Alfredo sauce

1/4 c. shredded cheddar cheese


Cook noodles according to package directions.  Place cooked noodles in cold water.  Saute onion in butter in skillet.  Cook broccoli using package directions; drain.  Beat cottage cheese in bowl until smooth.  Add 1 1/4 c. cheddar cheese; mix well.  Add sauteed onion, broccoli, seasonings, Parmesan cheese and flour; mix well.  Drain noodles; pat dry.  Spread 1/4 c. cottage cheese mixture on each noodle.  Roll up.  Spread a small amount of Alfredo sauce in bottom of baking dish.  Arrange roll-ups seam side down in sauce.  Cover with remaining sauce.  Bake at 350 degrees for 30 minutes.  Sprinkle with remaining 1/4 c. cheddar cheese.  Bake until cheese melts.
