Chicken and Squash Casserole

This casserole was a hit with everyone!  Each bite is filled with Southern comfort. Kevin’s version of this recipe comes from Presbyterian Potluck, A Collection of Favorite Recipes Compiled by Members and Friends of Clear Lake Presbyterian Church and is brought to you by his Kickstarter backers.

Ingredients:

2 lb. squash, sliced

1 onion, chopped

1 small pkg. Stovetop Stuffing mix

1 stick butter, melted

1 c. sour cream

1 can cream of chicken soup

1 whole chicken

Directions:

Boil and debone chicken.  Chop chicken into bite sized pieces.  Stew squash and onion.  Drain well.  Toss stuffing mix with butter; set some aside to line bottom and top of casserole.  Mix remaining stuffing mixture with sour cream, soup, and chicken.  Add squash and onion.  Line bottom of a casserole dish with stuffing.  Pour in the chicken mixture.  Top with stuffing.  Bake at 300 degrees F. for 30 minutes.
