Hit-of-the-Party Cheese Ball

Kevin decided to try a new recipe for a cheese ball to serve on Christmas Day.  We thought it would be tasty, and that a few people might enjoy it.  What we didn’t expect was to see how well everyone enjoyed it, and how they kept going back for seconds, thirds, and fourths.  This cheese ball almost outshined the Greenburg turkey, delicious side dishes, and the decadent desserts!  He was asked by several for the recipe.  With New Year parties right around the corner, we wanted to share this recipe so that you can make it and take it with you to help everyone start 2017 out with a bang!  Thank you, Kevin, for making your version of “Bacon Cheddar Cheese Ball” from Better Homes and Gardens Special Interest Publications- Food Gifts, 2011.


8 oz. extra-sharp cheddar cheese (buy block, and then grate)

8 oz pkg cream cheese, softened

1/2 of a 2 oz. jar diced pimiento, rinsed, drained, patted dry

2 tbsp. apricot preserves

1 tbsp. milk

1 1/2 tsp. Worcestershire sauce

1/8 tsp. Tabasco sauce

10 slices thick-cut sliced bacon, crisp-cooked and drained

1/4 c. pistachio nuts, chopped


In a large mixing bowl, combine cheddar and cream cheeses; let stand at room temperature for 30 minutes.  Add pimientos, apricot preserves, milk, Worcestershire sauce, and hot pepper sauce.  Crumble bacon slices and add to mixture.  Beat with an electric mixer on medium speed until almost smooth.  Cover and chill cheese mixture about 2 hours or until easy to handle.  Shape cheese mixture into a ball; cover and chill.  Just before serving or giving as a gift, roll in pistachio nuts.  Place cheese ball on a decorates plate; cover.  Serve with crackers or bread of your choice.
